Red Gravy

From as far back as the 1890s, Italian Immigrants came to St. Louis attracted by large deposits of red clay and soon became master bricklayers for the rapidly growing city. Red brick remains a dominant building material in the Gateway City and at the turn of the century was even laid in streets and roads. The Italian population that came to America after WWII along with other migrants from Western Europe had a tough time assimilating in the new world. Most banded into clusters of tight-knit communities to reproduce the culture of their homes transplanting their unique skills, traditions, ingredients, and recipes. Also coming home at this time were the American soldiers who had come to love the food of the old world they had liberated, especially pasta & pizza from Italy.
In St. Louis, the neighborhood where most native Italians found a new home was called “the Hill”. Primarily Catholics, the parish of St. Ambrose quickly became the center of all civic activity. From this hub, the neighborhood fanned out with restaurants, bars, cobblers, kitchenware stores, bakeries, delis, and specialty markets. They also founded respected factories that produced and distributed cured meats, sausages, gelato, pasta and other items where they spotted an opportunity. Many of these businesses are still active today and the community remains a tourist destination for anyone looking for an authentic St. Louis experience.
The term “gravy” comes from an attempt to explain some more authentic Italian dishes to the American consumers. The word “sugo” in Italian translated exactly to “sauce” in English. However, the word for a sauce with meat stewed into it, “ragu”, had no English translation. “Meat sauce” was used in some areas to describe the dish as well as the Italian term “Bolognese”. When Italian restaurateurs and chefs went to the English dictionary to find a translation for a meat-based sauce, they found the word “gravy”. The most popular dish which the new immigrants embraced using this term is “Sunday Gravy”, a sauce made from all the leftover meats and sausages from the week’s meals. These goodies are slowly cooked, throughout the Sabbath, into a deliciously rich sauce that is meant to be shared with the entire family.

You could say that Chef Franco Pisani has just the right recipe for success when it comes to preparing the finest Italian cuisine in Colorado Springs. Chef Franco expertly blends traditional family recipes with the freshest seasonal ingredients using contemporary Italian culinary concepts.
Chef Franco was raised by Italian immigrants in Waterbury, Connecticut. While Franco is a trained chef, and a graduate of Baltimore Culinary College, his love for cooking and cooking style comes from his greatest mentor, his mother Mary Pisani.
Franco would watch his mother in their family owned bakery, and hoped that her passion for food would be passed on to him.
After graduating, Franco worked in several Italian restaurants in the greater Connecticut area.
In 1996, he visited Colorado and one week later made the move to Colorado Springs.
Franco was the food and beverage director for a private country club in Colorado. But he missed the aromas of the Italian kitchen, so he took a job as a chef for a large Italian restaurant.
In April of 2003 he opened Paravicini’s Italian Bistro.

James started his career as a dishwasher at Embassy Suites in Colorado Springs at the age of 16. By chance (or fate) an employee didn’t show up for work and James was pulled over to make salads and sandwiches. That’s where it all began-his love of cooking and of his wife, Shaundy.
James and Shaundy met at Embassy Suites where Shaundy’s Dad was the General Manager. Shaundy spent her entire life in the hospitality business, moving all across America. Her passion is serving others and after having two kids, Alaina (24) and Quinn (19) she is happy to be working side by side with James in this new adventure!
James has a natural talent and gift for cooking, but never received a formal cooking education, just the “school of hard knocks” as he says. James cooked in Maui at the Grand Wailea, then moved back to Colorado Springs where he cooked at The Villa at Palmer Lake, Phantom Canyon Brewery, and Pelican’s. James began his time at The Warehouse Restaurant in 1998 working for owner, Raphael Sassower. He was the Executive Chef for The Warehouse until 2007 when he moved to New Mexico to work for Ted Turner’s Vermejo Park Ranch.

We went during happy hour, the place was full but we didn’t have to wait. Everything was very clean so we felt really good about that. The layout and design is really appealing. The bar area felt pretty open, and it was fun to be around people.We ordered several drinks, all of which were excellent (margarita, Manhattan, Gin & Tonic). I felt like the alcohol proportions were good (sometimes I order cocktails and you can tell they didn’t put much alcohol in it).For food we ordered the lobster shots, which were my favorite by far. There was a curry sauce poured on the lobster and they tasted delicious. We also got the birria tacos and a Mongolian beef steak, really good food. The service was excellent and we had a great evening-we will definitely be back.
We came in on a Wednesday night to celebrate Valentines Day. Been here before for their excellent happy hour but decided to try the regular menu items in the dining room. Scott was a very personable server and took great care of us. As a former restaurant owner, I always appreciate the extra touch when the proprietor is actively envolvlved and it Kelly gave us many fantastic menu recommendations. One dish that we tasted was sooo good I layed in bed wondering how someone created it. The surf and turf sushi was amazing, especially the use of steak in a sushi roll. Cudos to Chef Ricardo for that. Ambli is a must try for any restaurant connoisseur
The Margarita at Pine Creek

In 1969, Ken and Pati Davidson quit their real jobs and opened a Mexican Import shop and art gallery in Pati’s grandmother’s house on Bonfoy street, what was then the east side of town. They named the shop “Margarita” for the white daisies they had seen in their travels to Mexico (the drink was not popular in the 60’s). Ken was a wood and metal sculptor and Pati served the soup meals she had loved as a child in her grandmother’s dining room. After two years, they saw that the food was more appealing than the imports and decided to reorganize.
Pati and Ken, with the help of architect Al Feinstein built the New Margarita on property that has been in Pati’s family since the turn of the last century. Pati’s grandfather Tudor bought the Teachout ranch as well as part of General Palmer’s estate with the intention of mining the coal vein that run through the sandstone formations along the west side of Monument Creek. He fell in love with the land, and instead of mining it, his family used it exclusively for picnics for the last 100 years (except for 5 or 6 years when great Aunt Bessie and her husband tried to farm on it in the 20’s). Cooking on the property has an auspicious history—since Aunt Bessie had told stories of chasing off “the Indians” when she baked her gingerbread!
Pati took some more cooking classes, elaborated on her soup and salad concept and The Margarita at Pine Creek emerged in 1974. The Round building that was to have been Ken’s studio was soon leased as an art gallery as his services were needed as a host, dishwasher, repairmen and groundskeeper. The southwest wing of the restaurant was originally a plant and gift shop. Both spaces became the “South 40” dining room in 1984.
Since Ken’s Death in 1993, Pati and the long term staff (some here for over 30 years) have continued the evolution process and believe his spirit is still a significant part of the Margarita at Pine Creek.

Streetcar 520

Positioned in the heart of the city, our building was originally built to store and maintenance the streetcars that once traveled Tejon Street. Colorado Springs Rapid Transit Railway operated them from 1902 to 1932, when they were eventually decommissioned and replaced with busses. Owner/operator, Ari Knaup, put together an extensive collection of old vintage photographs and rail maps. Her vision was to utilize the buildings roots and original purpose as a core component of the concept and brand of Streetcar520.

Owner and Executive Chef Giuliano Casulli graduated as a Certified Master Chef from Scuola Alberghiera, Castellana Grotte, Bari, Italy. During the summer Giuliano moved to Venezia, Italy, and worked at numerous hotel restaurants while on break from school. During school, he worked in local restaurants in his hometown of Putignano. After graduating, Giuliano moved to Texas where he worked as a Sous-Chef and ultimately as an Executive Chef. Giuliano then became a partial owner of his former restaurant Piccolo Mondo in the Dallas/Ft. Worth Metroplex. During this time he was the winner of the 1995 Zagat Best Italian Restaurants award, among many People’s Choice Awards from Taste of Arlington. On August 3, 2012, Giuliano decided it was time for a change and brought the taste of Southern Italy to beautiful Colorado Springs, Colorado. Our story began in Lake George, Colorado, where the original Mountain Shadows served locals and tourists in the early 1990s. Business thrived, and soon, the Old Colorado City location opened, bringing mountain charm and comfort food to Colorado Springs’ historic district.
